InformationThis study aimed to determine the impact of milking practices on the microbiological quality of milk.The bacteriological quality of raw cow's milk was assessed at various points in the production process.Following these investigations, 240 milk samples were collected at various stages of the production chain, including from the udder of the cow, the containers of the producer, and the containers of the collector in route to the dairy.Germ levels varied depending on the farm and the sampling site.The predominant microbiota was Staphylococcus aureus, which accounted for 84.44% of non-compliant microbiota depending on the season.This was followed by total mesophilic aerobic microbiota (FAMT) at 75.73%, yeasts and molds at 63.52%, and the presence of Salmonella spp, and Escherichia.coli at 36.11% and 20.45% respectively.Contaminated milk can transmit pathogenic microorganisms to humans and pose a serious public health risk.This study highlights the importance of supervising stakeholders and disseminating good hygiene practices throughout the production chain to reduce public health risks.
