Abstract To avoid empirical modeling and embrace a relevant phenomenological analysis, the present work deals with the conditions allowing to adopt the transfer by internal water diffusion as the limiting process of the whole drying. Verification of the Negligible External Resistance NER criterion has been conducted and the main part of the drying kinetics allows expressing the effective diffusivity D eff of water within the porous material. Moreover, the kinetic experimental data of both the initial and final stages must be excluded. The first one concerns the surface interaction while the last paradoxical stage reveals the vapor transfer within the porous medium. Instant Controlled Pressure-Drop DIC pretreatment was adopted in the drying of myrtle leaves and fruits. An instant pressure drop towards a vacuum occurs after a saturated steam pressure P ranged between 100 and 500 kPa for a short processing time tof20/60s and 10/30 s for myrtle leaves and fruits, respectively. Afterward, the drying experiments were carried out with a constant airflow of 50°C and 2.5 m/s. The phenomenological modeling of drying kinetics was dedicated to well analyzing the impact of DIC operating parameters on the physical and statistical analyses.
