The study objected to the pomological and technological characterization of thirteen olive cultivars, implanted in three geographical sites of different environments. Each olive cultivar, expressed different genetic potential. The Gordal variety presented the largest fruit with (10,69g). Individuals of the varieties (Frantoio, Carolea, Gordal, Hojiblanca, Arbéquine, Picholine of Languedoc) presented significant to very high variability, depending on the culture sites selected. The 3 varieties (Arbéquine, Frantoio, Leccino), have presented a pulp stone ratio less than 5, and differentiated by their oil fruit ability. This confirms their preferred ability to table olives or double purpose. The varieties tested at elevated alitude had a higher maturity index and more advanced oil content than those cultivated at low altitude. These varieties confirm their perfect and specific adaptation to the pedoclimatic conditions of rainfed or dryed cultivation areas.
