Fungal Amylases Applications and Functional Properties

Abstract

Amylases are enzymes that break down starch into simple sugars through a process called hydrolysis. They are useful in many different parts of the industry. Fungal amylases are getting a lot of attention because they can be used in a lot of different ways, work with a lot of numerous substrates, and stay stable in a lot of various environments. These enzymes are widely used in the food and drink industries to make high-fructose corn syrup, brew beer, bake, and clear fruit juice. Fungal amylases are very important for biotechnological efforts to clean up the environment, process pulp and paper, and get rid of sizing in textiles. Fungal amylases are great catalysts for industrial processes because they can work in a wide range of conditions and stay stable at high temperatures.
