This chapter presents a practical follow-up to earlier AI-guided genomic investigations, examining the functional characterization and therapeutic benefits of Egyptian Lactobacillus strains for food safety and viral defense. Metabolomic and phenotypic assays were used to confirm bacteriocin production and viral inhibition in vitro. The link between probiotic features—adhesion, immunomodulation—and host genetics has been explored to inform personalized nutrition. Key regulatory and ethical frameworks, including the Codex, EFSA, and WHO-Food Safety, are integrated.
